Psychobiotics: Bacteria For Your Brain?

 

Every functional medicine psychiatrist has case stories of the ‘probiotic cure’ – of a patient with debilitating symptoms, often obsessive compulsive range, whose symptoms remitted completely with dietary change and probiotic supplementation. Is this voodoo or is it based on a growing understanding of the role of the microbiome in mental health and behavior? For two decades now, pioneering researchers have been substantiating inflammatory models of mental illnesses such as depression, bipolar disorder, and schizophrenia.  Research has focused on markers that indicate immune distress in an important subset of patients, many of whom are labeled “treatment resistant.” Through this body of literature, we have identified that depression can be induced, in animals and in humans through inflammatory agents, that it is correlated with blood levels of inflammatory markers, in a linear way (more markers = worse depression), and that symptoms can be reversed through pharmaceutical anti-inflammatories.

Inflammatory Models of Mental Illness:

The Role for the Gut

Working with this premise, where is the best place to begin when we consider how to modify inflammatory states in the body, naturally? You guessed it, it’s the gut. Housing >70% of our immune system, the gut is our interface between the outside and inside world, separated by one-cell-thickness. The resident microorganisms, outnumbering by 10:1 by our human body cells, develop an ecosystem through postnatal exposures, in the vaginal canal, through breastfeeding, and the immediate environment.  Disruption to the balance of bacteria through medication exposures, gluten, herbicides, stress, and infection can set the stage for the innate immune system to prepare for attack. Depression, associated with compromised integrity of this intestinal barrier, becomes the swirling storm of inflammation, impairment of cellular machinery (i.e. mitochondria), oxidative stress, and inflammation in a carousel-like forward rotation. Specifically, depression is associated with elevated levels of lipopolysaccharide (LPS), a nutrient-binding, inflammatory toxin produced by bacteria that are intended to remain in the gut.

If depression is a downstream collection of symptoms, and inflammation, oxidative stress, and mitochondrial dysfunction are driving these symptoms, what is at the source? It appears, from data in animals and humans, that disruption to our gut ecology may be a major player, and the microbiome has stepped to the forefront of cutting-edge psychiatric research.

Enter psychobiotics: “a live organism that, when ingested in adequate amounts, produces a health benefit in patients suffering from psychiatric illness.”

A review by Dinan et al. encompasses the clinical basis for the use of probiotics in mental health with reference to animal studies in which behavioral changes resulted from exposure to bacterial strains such as bifidobacterium and lactobacillus. In placebo-controlled trials in humans, measures of anxiety, chronic fatigue, and depression and anxiety associated with irritable bowel syndrome.

The therapeutic clinical applications of probiotics have been limited to a handful of strains out of the more than 7000 at last count. It appears that colonization is not an expected outcome of probiotic supplementation, and that genomic communication between bacteria and immune receptors may account for anti-inflammatory effects.

Ancient Wisdom

Given how little is known about therapeutic applications of different strains, it may make sense to defer to ancestral practices that confirm the importance of probiotic exposures. In these foods such as lactofermented kimchi, pickles, sauerkraut, and other traditional vegetables, microbes are acting on the food, and the food is then acting on our microbes.

What do bacteria accomplish in the gut? Do they just help with digestion? According to Selhub et al., they:

• Direct protection of the intestinal barrier;

• Influence on local and systemic antioxidant status, reduction in lipid peroxidation;

• Direct, microbial-produced neurochemical production, for example, gammaaminobutyric

acid (GABA);

• Indirect influence on neurotransmitter or neuropeptide production;

• Prevention of stress-induced alterations to overall intestinal microbiota;

• Direct activation of neural pathways between gut and brain;

• Limitation of inflammatory cytokine production;

• Modulation of neurotrophic chemicals, including brain-derived neurotrophic factor;

• Limitation of carbohydrate malabsorption;

• Improvement of nutritional status, for example, omega-3 fatty acids, minerals, dietary

phytochemicals;

• Limitation of small intestinal bacterial overgrowth;

• Reduction of amine or uremic toxin burden;

• Limitation of gastric or intestinal pathogens (for example, Helicobacter pylori);

• Analgesic properties.

Given widespread fermentation practices in traditional cultures, it appears that this dietary wisdom may serve to ameliorate gut-based inflammation and promote optimal nutrient assimilation as described in this review:

Traditional dietary practices have completely divergent effects of blood LPS levels; significant reductions (38%) have been noted after a one-month adherence to a prudent (traditional) diet, while the Western diet provokes LPS elevations .”

In addition to increasing bioavailability and production of minerals, neurochemicals, and fatty acids, fermented foods actually produce methylfolate, an activated form of folate required for methylation: brain chemical synthesis, detox, and gene expression.

Because of the complex coevolution of bacterial strains, cultivated through our food supply, and complementary to our inner microbiomes, we have an opportunity to use therapeutic foods to reeducate an immune system that has been drawn off course. Psychobiotics have the potential to modulate multiple different relevant factors at once:

“This could manifest, behaviorally, via magnified antioxidant and anti-inflammatory activity, reduction of intestinal permeability and the detrimental effects of LPS, improved glycemic control, positive influence on nutritional status (and therefore neurotransmission and neuropeptide production), direct production of GABA, and other bioactive chemicals, as well as a direct role in gut-to-brain communication via a beneficial shift in the intestinal microbiota itself.”

It is therefore compelling to consider the power of reconnecting to the natural world through our food; communicating through our guts to our brains, that nutrients are plentiful, our bodies are safe, and that our inflammatory systems can be put at ease. It is under these circumstances that the infinite complexity of the endocrine, immune, and gastrointestinal systems can play out, unhindered in support of mental health and wellness.

Oh, people. I”m about to reveal something to you that has taken me months to work up the nerve to confess.

Are you ready for this? {I’m not sure I am, but here goes…}

I haven’t used toothpaste in over a year.

Oh my gosh. I can’t believe I just said that out loud. On the internet.

I guess now I have to explain myself, huh?

Exploring alternate tooth care…

Over a year ago now I started looking into natural tooth care, as part of my goal to make better, more natural choices in each area of my health and my household.

I thought we had been doing good in this area, using a ‘natural’ brand toothpaste. Until I realized that even my natural toothpaste had stuff I knew I wanted to avoid–like sweeteners, fluoride, and glycerin.

It didn’t take long as I looking into natural, holistic approaches to tooth care to realize that what we eat has so much more of an affect on our teeth than the substance we scrub them with, and maybe my search for a ‘safe’ toothpaste was a waste of energy. And then I read about people not using toothpaste at all, and, well, since toothpaste (and the alternatives people talked about using) has always given me the ibby-jibbies, I decided to just quit the habit entirely.

So, I just scrubbed with water. And it seemed to work fine.

What in the world is Oil Pulling?

Later, I heard about oil pulling. It was such a strange term, I didn’t even look into it for a while. Till I realized that the pain and sensitivity I had been experiencing in my teeth off an on for a while might be remedied through this idea. So, I read up on it—it made sense (coconut oil is anti-bacterial, and could pull toxins from your mouth when you swished it in your mouth for 15-20 min.)—and I tried it.

I posted the above photo on my Facebook page and had a lot of friends ask me to report how it worked. So, here’s the report:

I loved how my teeth felt on this new cleansing routine—I felt it reduced plaque and made my teeth stronger. Within a month, all sensitivity I’d been experiencing in my lower molars was gone.

So, I quit toothpaste, and replaced it with oil pulling, and my teeth have never been healthier.

Now, that’s my story, but I put a ‘we’ in the title, because Jeremy’s got a story, too.

And Then Mr. Holden Tried It…

Several months ago, my husband came up to me and said, “I think I have a cavity.” I looked in his mouth and was mortified. His back wisdom tooth was—I kid you not—green and brown and black and pitted, and definitely did not look healthy. Neither of us had ever had a cavity before, but I was pretty sure this was a case study.

I said, “Honey! You need to start oil pulling right away!”

Well, you know, he kinda looked at me the way I imagine you looked at me when I said I quit toothpaste.

But a week later, he felt a chunk flake off of said tooth, and the next morning he pulled out the coconut oil before breakfast. (They say you should rinse first thing in the am).

He began oil pulling faithfully every morning, as well as taking cod liver oil (upping nutrition was something I read was key to regenerating tooth decay). Within 3 days, he said the pain was gone. And a month later, after oil pulling 5-6 times a week, I looked in his mouth, and his tooth was—are you ready for this? White. White with a bit of yellow, but the black and green and brown were all gone, and the surface of the tooth was smoothing out instead of being pitted.

People, I am not lyin’ here.

Tooth regeneration is possible, and surprisingly simple…

God designed our bodies so incredibly. If we are nourishing our bodies well, He designed them to be able to heal from injury and disease—even our teeth.

I share our stories because the idea of ‘healing your teeth’ is quite foreign to people. But listen to this…

“That tooth decay is caused by nutrient deficiencies and not bacteria has been proven in both animal and laboratory experiments published in books and dental journals…

…If brushing, flossing, massive fluoridation campaigns, and dental surgery were effective in preventing tooth decay, it would not get worse over time. It would stay the same, or get better.”  (Ramiel Nagel of CureToothDecay.com)

But that’s not what’s happening, is it? It has become normal to have our teeth rot out of our head, starting not in our 60’s, or 40’s, but as children and even babies.

“What is missing from the ADA’s bacteria theory of cavities is that strong teeth resist acid and bacteria. And when you, the consumer, understand that a strong tooth resists acid indefinitely, then the next logical question is, what makes a tooth strong?” (Ramiel Nagel)

The answer, which Ramiel details in his ebook (linked below) is good nutrition. And you know what it means when I use that term around here…lots of whole foods, good fat, raw milk, tasty meats and properly prepared grains and veggies. Ramiel especially stresses whole, raw milk in the diet and plenty of deeply nourishing fats like butter oil and cod liver oil.

So, gotta a toothache? Wish you had stronger teeth? Don’t despair. You can actually do something other than have them all pulled and getting dentures. (Oh, yay!) Increase your nutrition and try oil pulling!

How to Oil Pull With Coconut Oil

  1. Scoop about 2 tsp. of coconut oil out of your jar and pop it in your mouth.
  2. Chew or hold the oil in your mouth till it melts and becomes liquid (takes about 30 seconds).
  3. Start swishing, pulling the oil back and forth and sideways through all your teeth.
  4. Swish for 20 min., spitting the oil out (into the trash) when you’re finished.

Why Oil Pulling works:

Your teeth are actually porous, comprised of yards and yards of minute passages (like a sponge) that bring nutrients to the outer enamel when good nutrition is present in your diet…or suck toxins into the teeth when nutrition is lacking. Oil itself has the ability to cut right through plaque to the tooth surface, and coconut oil in particular has rich, anti-bacterial properties. It’s believed that  one of the reasons oil pulling strengthens teeth is that it can help reverse the flow of toxins, pulling bacteria out of the teeth, and becoming a vehicle to dispose of toxins. Also, we’ve found the swishing action can be as effective as flossing, without any damage to gums (yes–I’ve gotten popcorn kernels out with oil pulling!)

Where to get good Coconut Oil:

Any organic, cold-pressed, virgin coconut oil will work for this. If it smells like coconut, that’s a sign that it hasn’t been over-processed and still has all the wonderful things God put in the coconut to begin with! You’re looking for coconut oil that is cold pressed, extra virgin, and organic, like this brand available right from Amazon (this is an affiliate links–thanks for helping me keep the lights on around here!).

Energy-saving Bulb Dangers

By now, we have all seen them.  We probably all have some in our homes. We most certainly have come into contact with them in the homes to which we respond.  I am talking about energy-saving light bulbs. They have many different names; compact fluorescent lamp (CFL), compact fluorescent light, and compact fluorescent tube, all describe a fluorescent lamp designed to replace an incandescent lamp. Compared to their incandescent brothers producing the same amount of visible light, CFLs consume less power (from 1/5 to 1/3) and have a longer service life (8 to 15 times).

But the news in our quest to be better stewards of our planet is not all good. These CFLs have a small electronic ballast in their base. There is a fire hazard associated with these ballasts, but that is a conversation for another day. Let’s talk about another danger posed by these “green” lamps: mercury exposure and poisoning.

Like all fluorescent lamps, CFLs contain mercury. This fact not only complicates their disposal under normal conditions, the problem is exacerbated when the lamp is broken and the mercury is allowed “out of its box.” The symptoms of mercury poisoning typically include sensory impairment (vision, hearing, and speech), a lack of coordination, skin discoloration, tingling, itching, burning or pain, and desquamation (shedding of skin).

Mercury in lamps is typically present as either elemental mercury liquid, vapor, or both, since the liquid readily evaporates at room temperature. When broken indoors, lamps may emit sufficient mercury vapor to present health concerns. Breakage of multiple lamps presents a greater concern.  Injection of mercury into the body through broken glass that is contaminated is of particular concern.

Here is the scenario:
You are dispatched to The Smith residence for a laceration to the foot. Routine run huh? Nope. What you were not told is that Mr. Smith uses CFL lamps in his home. One of those lamps burned-out, and Mr. Smith did not wait for the lamp to cool down before he stood on a chair and removed it. Because the lamp was hot to the touch, Mr. Smith dropped it. As the lamp hit the floor, it exploded. As Mr. Smith descended from the chair he stepped, barefooted, into the broken glass and exposed mercury.
Here is what Mr. Smith’s foot looked like during his 2-week stay in ICU:

At one stage it was feared that his foot would need to be amputated. Currently his foot is connected to a vacuum pump to remove continuously dead tissue.

The following are the recommended actions to take in the event of a broken CFL.

  • Evacuate the room, taking care not to step on the broken glass littering the floor
  • Ventilate the room for a MINIMUM of 15 minutes (EPA recommendation)
  • DO NOT clean the debris of the broken lamp with a vacuum cleaner as this will spread toxic mercury droplets throughout the house either immediately or upon the future use of the vacuum
  • Don protective gloves (I’ll be the one in SCBA too!); use a broom or brush to sweep the debris into a dustpan; empty the contents of the dustpan into a plastic bag; seal the plastic bag
  • DO NOT dispose of the plastic bag into an ordinary refuse receptacle
  • The debris is lawfully a Hazardous Material and must be disposed of accordingly

Depending on the severity of the spill, a more thorough clean-up regimen may need to be employed. Private companies exist that specialize in this type of operation.  Mercury is a toxin, and should be treated with the utmost of care and respect. A CFL may look benign, and make you feel good about “going green,” but once the poison is “out of its box” and able to cause an exposure, it’s a brand new deal.   Stay Safe folks!

If you have cancer or know and care about someone that is suffering from cancer, please read and share this article.

In most cases, the consumption of sugar WILL increase the pace that cancerous tumours will grow.  Here is why:

1. Tumours actually have their own insulin receptors and when we consume any form of sugar (including fructose), it gets shuttled into the tumour.
2. Glucose is energy and can fuel the tumour to grow.
3. Excessive sugar/glycogen in your blood will make your body acidic, a perfect growing condition for cancer cells to thrive.
4. When we break down sugars in the body, lactic acid is created as a bi-product. This makes your body even more acidic.
5. Cancerous tumours themselves, create more acid by the way of lactic acid.

However, cancer cells struggle to grow in an alkaline environment and even can decline.
 
So what can you do?

1. Avoid adding any form of sugar to your diet. This includes fruit juices, brown or raw sugar, high fructose corn syrup and of course sucrose from white table sugar.

2. Limit products that get broken down into blood sugar very quickly. Eg. Pasta made from processed white flour gets broken down almost immediately and although it doesn’t contain sugar, it converts to glycogen in the body and can fuel cancer cells.

3. Never consume fruit juices. Yes they have antioxidants, but they are also full of easy to absorb sugar. Eat a piece of fruit instead that still has its fibre intact. Supplement vitamins and minerals.

4. Avoid any foods with a label or more than one ingredient. If you do choose to eat processed foods, PLEASE look at the label and see how much sugar has been added. This might be represented as sucrose, high fructose corn syrup, glucose or alcohol sugars. In a lot of cases, “sugar” will be listed, sneakily followed by two or three other ingredients which are also forms of sugar. 95% of processed foods will have sugar added to make it taste better and tempt you consume more. Increasing food manufacturer’s profits… at the cost of your health. Even products like tomato soup that you certainly wouldn’t expect to contain sugar, often contains over 5 teaspoons per can. Proceed with caution. All the little bits adds up. Breakfast cereals tend to be the worst false representation of a healthy food.

5. Eat lots of leafy green vegetables that are high in chlorophyll and will reduce your body’s PH balance. Wheat grass powder is also a great way of getting your greens and reducing your body’s PH.

6. Limit your consumption of beef, pork and lamb to once or twice a week. Try to eat mainly fish and free range chicken/eggs as other sources of protein. When our stomach breaks down meats, it creates more acid.

7. Limit coffee to one to two cups a day. Coffee increases acidity.

8. Exercise regularly, but not to excess. Excessive exercise increases lactic acid production.

9. Make sure you get ample rest and recovery. When we are stressed or tired, our body’s adrenal
cortex secretes higher levels of cortisol. This will make us more stressed, mess with our other hormones and contribute to immunity dysfunctions.
 
Sugar really is one of the largest factors contributing to our worlds rapidly increasing cases of heart disease, diabetes and cancer. Avoid it and reduce your chances of getting one of these diseases. If you are unfortunate enough to already have one, remove sugar from your diet and I assure you that you will not only feel better, but you will also have a much better quality of life.

It is no coincidence that as our sugar consumption has increased over the past 20 years, the cases of degenerative disease have risen at a comparative level. We now consume 35% less fat than we did 20 years ago, but our average sugar consumption has risen from 26lbs to 135lbs per year!

We need to open our eyes and demand that food manufactures stop sneaking sugar into everything we eat. It’s making us sicker but unfortunately no one is standing up for our rights to have more transparency and education about what is really in our food.

You can make a stand by no longer supporting the big food manufacturers and stop buying their sugary processed foods. Support your local farmers, eat real food and learn how to fall in love with FOOD again!

How I Healed My Mother’s Skin Cancer At Home

For the last 3 years, my mother had been suffering with a type of skin cancer called Basal Cell Carcinoma. This is the less aggressive form of skin cancer, deemed as non-life threatening by the medical industry, in contrast to the more malignant form of skin cancer known as Melanoma.

The basal cell first began as a small red lesion on the crown of my mother’s head. It would start to bleed, then scab, then bleed again and then scab more.

The scab continued to grow and over the course of 3 years it nearly quadrupled in size. Not only did it grow wider, but it grew higher as well. Unfortunately, it took this long before my mother finally decided to go to the doctor.

She was referred to a Dermatologist by her GP. A biopsy was done and the lesion was confirmed as cancerous. At the initial consultation the Dermatologist said what every doctor says: “There is no cure for Basal Cell Carcinoma, but we can surgically remove it.”
He couldn’t guarantee that it wouldn’t return. Regardless, she scheduled an appointment to have it removed.

Not too long after the surgery, the basal cell returned – this time with a vengeance. It seemed to grow much quicker, and within two weeks after the surgery the bleeding and scabbing was back again. It was extremely frustrating to witness this, and I truly felt powerless over the matter. I made the decision to go to the Dermatologist with my mother on her next visit, and I was prepared to ask him a plethora of questions, my first question being, “What the heck is this thing???”
That is when I learned the medical term for this type of skin cancer.

Taking Matters Into Our Own Hands

Equipped with the term ‘Basal Cell Carcinoma’ and Google, I researched everything I could about it, including natural treatments. I recalled reading some articles about how sodium bicarbonate, or baking soda, has a high success rate with various types of cancers, so I looked into the topical use of baking soda on basal cells. Surprisingly, I found quite a few personal testimonies from people who had healed a basal cell completely, using just baking soda and water.  Cancer cannot thrive in an alkaline environment. And that’s exactly what baking soda produces.

My mother had the basal cell removed surgically twice more before she finally let me try the baking soda treatment. And 5 weeks ago is when this treatment began.

I modified the concoction by using coconut oil instead of water, as raw organic coconut oil helps in the regeneration of skin cells. I mixed one part baking soda and one part coconut oil (a teaspoon of each) in a shot glass and stirred it up until it became a malleable paste, which is what I applied to the affected area. The results were truly astonishing.

Please keep in mind that starting at an early age my mother began to experience hair loss.  However, as a result of less hair it was much easier to apply the treatment, and the effect of the treatment was more visible.

The Method I Used

- Raw organic coconut oil (the brand I used was Artisana)
- Aluminum-free baking soda (I purchased it at a holistic health food store)
- A shot glass, to effectively stir the mixture within
- Something to stir the mixture with, I used the narrow handle of a small metal spoon.
- Polysporin Triple 3 Antibiotics, or any other antibiotic ointment to apply at night

I stirred 1 part baking soda and 1 part coconut oil in a shot glass until it became a malleable paste that was easy to apply. It helped to apply a bit of warmth to melt the coconut oil faster – I let the shot glass run under hot water for a bit.

Using the handle of the spoon that I stirred with, I applied the mixture to the affected area. I DID NOT RUB IT IN. Instead I gently slathered the area with the paste and let it remain there for as long as possible. Then I applied a shower cap to keep the treatment in place.

I aimed for 3 applications a day for the first week, and 2 for the second week moving forward, and made sure to properly clean the affected area before each application.

A basal cell has roots that reach much deeper into the skin than it appears, it is not just on the surface, therefor I learned that it is important to continue using the treatment much longer, even when the skin has fully patched up.

What We All Learned From This Experience

Looking back at the start of this whole experience, I realize that I was just as skeptical as most people with regards to a successful treatment that costs only a few dollars, not to mention one that is sitting in my kitchen pantry! I completely understand why a simple solution like baking soda and coconut oil would be cast aside in favor of a more ‘sophisticated’ treatment.

While I am by no means completely against mainstream or allopathic medicine, it is my opinion that we have been heavily conditioned by the medical industry to believe that we have absolutely no power over our own physical and mental health, and that the solutions and cures to our ailments lie far beyond our reach; that only a large sum of money can buy a cure.
I can’t stress enough that this is simply not true.

Throughout the progress of my mother’s healing, my whole family had experienced first hand how effective an alternative treatment can be. Not only is it effective – it is affordable, safe, and free of side-effects. Needless to say, my family’s opinion on mainstream/allopathic medicine has shifted significantly.

My hope is that people who are going through a similar experience can come to understand the power is in their hands to heal themselves. No one is going to spoon-feed us the truth about how we can heal using simple and affordable methods – especially not the medical industry. We must do our own research and reclaim our healing power.

Cultured veggies – a new approach to health

Raw cultured vegetables have been around for thousands of years, but we have never needed

them more than we do today.  Rich in
lactobacilli and enzymes, alkaline-forming, and loaded with vitamins, they are an ideal food that can and should be consumed with every meal.

Since they are an excellent source of Vitamin C, Dutch seamen used to carry them to prevent scurvy.  For centuries, the Chinese have cultured cabbage each fall to ensure a source of greens through the winter (if they have no refrigeration).

The friendly bacteria, the enzymes, and the high lactic acid in raw cultured vegetables add to health and longevity.

They taste tangy and it is probably a new taste for you, but personally speaking, cultured
vegetables are the best way to eliminate cravings for sweets.  After initially getting use to eating cultured vegetables, you will soon feel that no meal is complete without
them.  Since they are all vegetable, they combine with either a protein or a starch meal.

So what exactly are raw cultured vegetables?

They’re sauerkraut. The Austrians coined this word, from sauer (sour) and kraut (greens
or plants).  But they are very different than the pasteurized sauerkraut you buy in the supermarkets.  The pasteurization (heating) process destroys precious enzymes, and the added salt eliminates any health benefits.  The variety of vegetables that you can culture are endless and once you culture your first batch of vegetables, you will want to experiment and try different vegetables that perhaps you’ve never tried before.

Here are many of the benefits to adding cultured vegetables to your diet:

  • Help re-establish a healthy inner ecosystem.
  • If you have ever experienced a sluggish thyroid, it can be such an emotional roller coaster to get it functioning properly. Personally speaking cultured vegetables are one of things that have helped to nourish and re-balance my thyroid which had been sluggish for about a year. It is very important when you have a sluggish thyroid, to do everything possible to eat more alkalizing foods such as cultured vegetables, coconut kefir (Fermented coconut water from young Thai coconuts. They are the white coconuts that you see at Asian markets or Whole Foods.), sea vegetables (kelp, dulse, nori, kombu, arame, etc.)
  • If you have ever struggled with your weight or wanted to lose those nagging pounds we’ve all held onto, add cultured vegetables to your diet. Losing weight is all about how well everything is flowing in your digestive tract, how regular you are and how to balance the acids in your body to a more alkalizing state.
  • They improve digestion.  Knowing the health benefits of raw foods, eating cultured vegetables is an easy way to implement raw foods into your diet.  However, depending on how well you digest your foods, your digestive tract may be too weak to tolerate them.  Cultured vegetables eliminate this concern, since they are pre-digested.  This means that even before they enter your mouth, the friendly bacteria have already converted the natural sugars and starches in the vegetables into lactic acid, a job your own saliva and digestive enzymes would do anyway.  The enzymes in the cultured vegetables also help digest other foods eaten with them.

During the fermentation period, the friendly bacteria are having the time of their life, reproducing and converting the sugars and starches to lactic acid.  Once the initial process is over, it is time to slow down the bacterial activity by putting the cultured vegetables in the refrigerator.  The cold greatly slows the fermentation, but does not stop it completely.
Even if the veggies sit in your refrigerator for months, they will not spoil; instead they become more like fine wine, more delicious with time.  Properly made, cultured vegetables have at least an eight month shelf life, although my veggies have never lasted that long.

The CDC has been shunning the correlations between thimerosal and neurological disorders for a very long time. Although the FDA gave a two year deadline to remove the mercury based preservative from vaccines after the neurotoxin was banned in 1999, it still remains to this day in 60 percent of flu vaccines. A vaccine industry watchdog has now obtained CDC documents that show statistically significant risks of autism associated with the vaccine preservative, something the CDC denies even when confronted with their own data.

For nearly ten years, Brian Hooker has been requesting documents that are kept under tight wraps by the Centers for Disease Control and Prevention (CDC). His more than 100 Freedom of Information Act (FOIA) requests have resulted in copious evidence that the vaccine preservative Thimerosal, which is still used in the flu shot that is administered to pregnant women and infants, can cause autism and other neurodevelopmental disorders.

Dr. Hooker, a PhD scientist, worked with two members of Congress to craft the letter to the CDC that recently resulted in his obtaining long-awaited data from the CDC, the significance of which is historic. According to Hooker, the data on over 400,000 infants born between 1991 and 1997, which was analyzed by CDC epidemiologist Thomas Verstraeten, MD, “proves unequivocally that in 2000, CDC officials were informed internally of the very high risk of autism, non-organic sleep disorder and speech disorder associated with Thimerosal exposure.”

Factually, thimerosal is a mercury-containing compound that is a known human carcinogen, mutagen, teratogen and immune-system disruptor at levels below 1 part-per-million, and a compound to which some humans can have an anaphylactic shock reaction. It is also a recognized reproductive and fetal toxin with no established toxicologically safe level of exposure for humans.
